Earliest greatsword is the Drangleic Greatsword. You can acquire this after fighting the pursuer. If you drop down onto a ledge there will be the sword, a 100% damage reduction shield, and a good set of Drangleic armor. The earliest ultra greatsword is the Greatsword, whishaw you can acquire in No Man's Wharf.
As far as I know, every Ultra Greatsword also has the ability to knock people on their asses, so you don't have to worry about sacrificing those kinds of attacks from GHs to UGSs. The most notable ones are the Black Knight Ultra Greatsword, Zweihander, Crypt Blacksword, King's Ultra Greatsword, and Pursuer's Ultra Greatsword.
